1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup unsalted butter, softened
3/4 cup packed light brown sugar
1/4 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 cup mashed ripe bananas (about 3 medium)
1/2 cup sour cream or plain Greek yogurt
1/2 cup chopped walnuts, plus 2 tablespoons for topping
Instructions
Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease well.
In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon. Set this dry mixture aside.
In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. You are building the base flavor here.
Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
Gently mix in the mashed bananas and sour cream until just combined. Do not overmix at this stage.
Gradually add the dry ingredients to the wet ingredients. Mix on low speed or by hand until just moistened. A few streaks of flour are fine.
Fold in the 1/2 cup of chopped walnuts.
Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full. Sprinkle the remaining 2 tablespoons of walnuts on top of the batter.
Bake for 18 to 22 minutes, or until a toothpick inserted into the center comes out clean.
Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
Notes
Use very ripe bananas for the best flavor and moisture in your muffins.
For extra flavor, you can toast the walnuts lightly before chopping and adding them to the batter.
If you do not have sour cream, plain Greek yogurt works wonderfully as a substitute.
