Bake rich, fudgy brownies in convenient muffin form. This recipe yields individual portions with a desirable crackly top.

  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Line a standard 12-cup muffin tin with paper liners or grease well.
  2. In a medium bowl, whisk the melted butter and sugar together until combined.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate small bowl, whisk together the cocoa powder, flour, salt, and baking powder.
  5. Gradually add the dry ingredients to the wet ingredients, mixing only until just combined. Do not overmix.
  6. Gently fold in the chocolate chips.
  7. Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
  8. Bake for 18 to 22 minutes. A toothpick inserted near the edge should come out with moist crumbs attached, not wet batter, for a fudgy center.
  9. Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For a chewier texture, you can substitute 1/4 cup of the granulated sugar with packed light brown sugar.
  • Add 1/2 cup of chopped walnuts or pecans to the batter with the chocolate chips for added crunch.
  • To achieve a more pronounced crinkly top, sprinkle a tiny pinch of granulated sugar over the top of each batter-filled cup before baking.
