1 tablespoon dried butterfly pea flowers
2 cups hot water
1/4 cup simple syrup (adjust to taste)
1/2 cup ice cubes
1 tablespoon fresh lemon juice (or lime juice)
Fresh mint sprig for garnish (optional)
Lemon or lime slices for garnish (optional)
Instructions
Steep the butterfly pea flowers in hot water for 5-7 minutes, or until the water turns a deep blue.
Strain the butterfly pea flower tea to remove the flowers.
Pour the blue tea into a glass.
Stir in the simple syrup until dissolved.
Add the ice cubes to the glass.
Slowly pour the lemon or lime juice over the ice. Watch as the color magically changes from blue to purple or pink!
Garnish with a mint sprig and lemon or lime slices if desired.
Serve immediately and enjoy your color-changing iced tea.
Notes
For a sweeter tea, add more simple syrup.
You can make simple syrup by combining equal parts sugar and water and heating until the sugar dissolves.
Experiment with different citrus juices for slightly different color variations.
