This simple cabbage salad delivers maximum crunch with a light, tangy vinaigrette. It is a quick, healthy side dish perfect for BBQs, meal prep, or any weeknight dinner.

Ingredients

Scale
  • 6 cups shredded green and purple cabbage mix
  • 2 medium carrots, julienned
  • 1/2 cup thinly sliced red onion
  • 1/4 cup apple cider vinegar
  • 3 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon celery seeds
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare the vegetables: Place the shredded cabbage, julienned carrots, and sliced red onion into a large mixing bowl.
  2. Make the vinaigrette: In a small bowl or jar, whisk together the apple cider vinegar, olive oil, Dijon mustard, honey or maple syrup, celery seeds, salt, and pepper until well combined.
  3. Dress the salad: Pour the vinaigrette over the cabbage mixture. Toss everything together until the vegetables are evenly coated.
  4. Rest for flavor: For the best flavor and crunch, let the salad sit for at least 15 minutes before serving. This allows the vinegar to slightly soften the cabbage.
  5. Serve: Taste and adjust seasoning if needed. Serve this refreshing salad immediately as a side dish.

Notes

  • For a heartier meal, add grilled chicken or chickpeas to make this a main dish cabbage salad.
  • If you are meal prepping, store the dressing separately and toss just before eating to maintain the crisp texture.
  • Substitute carrots with thinly sliced bell peppers for added color and sweetness.
