  • 1 medium head green cabbage, thinly sliced
  • 1 tablespoon neutral cooking oil (like canola or vegetable)
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/4 cup water or vegetable broth
  • For the Sauce:
  • 3 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon rice vinegar
  • 1 teaspoon granulated sugar
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch

Instructions

  1. Prepare the sauce: In a small bowl, whisk together the soy sauce, rice vinegar, sugar, sesame oil, and cornstarch until the cornstarch is dissolved. Set aside.
  2. Heat the oil in a large skillet or wok over medium-high heat until shimmering.
  3. Add the minced garlic and grated ginger to the hot oil. Stir fry for about 30 seconds until fragrant, being careful not to burn them.
  4. Add the sliced cabbage to the wok. Stir fry for 3 to 5 minutes, tossing constantly, until the cabbage begins to wilt but still retains some crispness.
  5. Pour the prepared sauce mixture over the cabbage. Immediately add the 1/4 cup of water or broth.
  6. Stir quickly and continuously for about 1 minute. The sauce will thicken rapidly due to the cornstarch.
  7. Remove from heat immediately when the sauce coats the cabbage evenly. Serve hot.

Notes

  • For a crisp-tender texture, do not overcook the cabbage; aim for 4 minutes of high-heat cooking.
  • Add 1/2 cup of sliced carrots or bell peppers along with the cabbage for extra color and texture.
  • To make this a main dish, add 1 cup of cooked, cubed tofu or sliced chicken breast during step 4.
  • If you prefer a spicier sauce, add 1/2 teaspoon of red pepper flakes with the garlic and ginger.
