  • 4 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 3 cups whole milk, warmed
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1/2 teaspoon cayenne pepper (adjust for heat preference)
  • 1 tablespoon Cajun seasoning (store-bought or homemade)
  • 8 ounces sharp cheddar cheese, shredded
  • 4 ounces Monterey Jack cheese, shredded
  • 2 ounces cream cheese, cubed

Instructions

  1. Cook the macaroni according to package directions until al dente. Drain well and set aside.
  2. In a large saucepan, melt the butter over medium heat. Whisk in the flour and cook for one minute, creating a roux.
  3. Gradually whisk in the warm milk until the mixture is smooth. Continue cooking, stirring often, until the sauce thickens enough to coat the back of a spoon. Do not boil.
  4. Reduce the heat to low. Stir in the salt, pepper, smoked paprika, garlic powder, onion powder, thyme, cayenne pepper, and Cajun seasoning. Mix well to combine the spices.
  5. Add the shredded cheddar, Monterey Jack, and cubed cream cheese to the sauce. Stir continuously until all the cheese is completely melted and the sauce is smooth and creamy.
  6. Add the cooked, drained macaroni to the cheese sauce. Stir gently until the pasta is evenly coated.
  7. Serve immediately for the best creamy texture.

Notes

  • For an extra layer of flavor, add 1/2 cup of cooked, shredded chicken seasoned with extra Cajun spice before mixing the pasta in.
  • Use freshly shredded cheese; pre-shredded cheese contains anti-caking agents that can make your sauce grainy.
