1 pound pasta, such as rotini or penne
2 cups cherry tomatoes, halved
1 cup fresh mozzarella balls (bocconcini), halved or quartered
1/2 cup fresh basil leaves, torn or chopped
1/2 cup Caesar dressing, store-bought or homemade
1/4 cup grated Parmesan cheese
Salt and black pepper to taste
Instructions
Cook pasta according to package directions until al dente. Drain and rinse with cold water to cool.
In a large bowl, combine the cooled pasta, cherry tomatoes, and fresh mozzarella.
Pour in the Caesar dressing and toss to coat evenly.
Add the fresh basil and grated Parmesan cheese. Gently toss again.
Season with salt and black pepper to taste.
Serve immediately or chill in the refrigerator for at least 30 minutes for flavors to meld.
Notes
For extra flavor, you can grill or roast the cherry tomatoes before adding them.
Add grilled chicken for a more substantial meal.
Adjust the amount of Caesar dressing to your preference.
Freshly grated Parmesan cheese makes a difference in taste.
