Make these creamy Caramel Apple Cheesecake Bars for a perfect fall dessert that pleases everyone. You get a buttery crust, rich cheesecake filling, and a sweet, slightly tart apple caramel topping.

Ingredients

  • For the Crust: 1 1/2 cups all-purpose flour, 1/2 cup granulated sugar, 1/4 teaspoon salt, 1/2 cup (1 stick) cold unsalted butter, cubed
  • For the Cheesecake Filling: 2 (8 ounce) packages cream cheese, softened, 1/2 cup granulated sugar, 1 large egg, 1 teaspoon vanilla extract
  • For the Caramel Apple Topping: 2 medium apples (like Honeycrisp or Granny Smith), peeled, cored, and diced, 1/4 cup packed brown sugar, 2 tablespoons unsalted butter, 1 tablespoon water, 1/4 teaspoon ground cinnamon, Pinch of salt

Instructions

  1. Preheat your oven to 350 degrees F. Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. For the crust, combine the flour, sugar, and salt in a bowl. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  3. Press the crust mixture evenly into the bottom of the prepared pan. Bake for 15 minutes.
  4. While the crust bakes, prepare the cheesecake filling. Beat the softened cream cheese and sugar together until smooth. Mix in the egg and vanilla extract until just combined. Do not overmix.
  5. Pour the cheesecake filling over the warm baked crust. Return the pan to the oven and bake for 20-25 minutes, or until the center is mostly set. Let cool slightly while you make the topping.
  6. For the topping, melt the butter in a small saucepan over medium heat. Add the diced apples, brown sugar, water, cinnamon, and salt.
  7. Cook, stirring occasionally, for 8 to 10 minutes, until the apples are tender and the sauce has thickened slightly into a caramel.
  8. Spoon the warm caramel apple mixture evenly over the partially cooled cheesecake layer.
  9. Cool the bars completely on a wire rack, then chill in the refrigerator for at least 4 hours, or preferably overnight, before cutting into squares.
