Prepare this make-ahead Caramel Pecan French Toast Bake for a stress-free brunch. It offers gooey caramel and a satisfying nutty crunch.

  • 1 loaf (1 pound) French bread or challah, cut into 1-inch cubes
  • 1 cup chopped pecans
  • 1 cup packed light brown sugar
  • 1/2 cup (1 stick) unsalted butter
  • 1/2 cup heavy cream
  • 6 large eggs
  • 1 1/2 cups whole milk
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Grease a 9×13 inch baking dish.
  2. Arrange half of the bread cubes in the prepared dish. Sprinkle with half of the chopped pecans.
  3. In a small saucepan over medium heat, melt the butter. Stir in the brown sugar and heavy cream until smooth. Pour this mixture evenly over the bread and pecans.
  4. Arrange the remaining bread cubes over the caramel layer. Sprinkle with the remaining pecans.
  5. In a large bowl, whisk together the eggs, milk, cinnamon, vanilla extract, and salt until well combined.
  6. Pour the egg mixture slowly and evenly over the bread in the baking dish. Press down gently to submerge the bread.
  7. Cover the dish tightly with plastic wrap. Refrigerate for at least 4 hours, or preferably overnight.
  8. When ready to bake, preheat your oven to 350 degrees F (175 degrees C). Remove the plastic wrap.
  9. Bake uncovered for 45 to 55 minutes, or until the top is golden brown and puffed, and a knife inserted near the center comes out clean.
  10. Let it cool for 10 minutes before serving.

Notes

  • You can make this bake up to 24 hours ahead of time.
  • Use day-old bread for the best texture.
  • For extra gooeyness, gently warm the caramel sauce before pouring it over the bread.
