2 large yellow onions, thinly sliced
2 tablespoons olive oil
1 tablespoon unsalted butter
1 teaspoon salt

4 ounces soft goat cheese, crumbled
1 large egg, beaten (for egg wash)
1 tablespoon fresh thyme leaves
2 tablespoons balsamic glaze (optional, for serving)
Instructions
Prepare the onions: Heat olive oil and butter in a large skillet over medium-low heat. Add the sliced onions, salt, and pepper. Cook slowly, stirring occasionally, for 30 to 40 minutes until the onions are deep brown and sweet. Remove from heat and let cool slightly.
Prepare the pastry: Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper. Unroll the puff pastry sheet. Cut the pastry into 9 equal squares (or use a round cutter for circles).
Assemble the tarts: Place the pastry cutouts on the prepared baking sheet. Score a border about half an inch from the edge of each piece, being careful not to cut all the way through the pastry. This helps create a raised edge.
Fill the tarts: Distribute the cooled caramelized onions evenly inside the scored borders of each pastry piece. Top the onions with crumbled goat cheese and sprinkle with fresh thyme leaves.
Bake: Brush the pastry edges with the beaten egg wash. Bake for 15 to 18 minutes, or until the pastry is puffed, golden brown, and cooked through.

Notes
For make-ahead preparation, you can caramelize the onions up to two days in advance and store them covered in the refrigerator.
