  • 2 slices of sturdy bread
  • 2 tablespoons butter, softened
  • 1 large onion, thinly sliced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1 teaspoon brown sugar (optional, for deeper caramelization)
  • 4 ounces sharp cheddar cheese, sliced or shredded
  • 2 ounces Gruyère cheese, sliced or shredded

Instructions

  1. Heat olive oil in a skillet over medium-low heat. Add the sliced onions and salt.
  2. Cook the onions slowly, stirring occasionally, for 25 to 35 minutes until deep golden brown and sweet. Add brown sugar, if using, during the last 5 minutes. Remove onions from the pan and set aside.
  3. Spread butter evenly on one side of each slice of bread.
  4. Place one slice of bread, butter-side down, in the same skillet over medium heat.
  5. Layer half the cheddar, all the caramelized onions, half the Gruyère, and the remaining cheddar on top of the bread in the skillet.
  6. Top with the second slice of bread, butter-side up.
  7. Grill for 3 to 4 minutes per side until the bread is golden brown and the cheese is completely melted and gooey. Press down gently with a spatula while cooking.
  8. Remove from the pan, slice in half, and serve immediately.
