Learn the best way to cook onions sweet by mastering the slow cooking technique for deep flavor. These perfect caramelized onions are a kitchen staple for dips, pasta, and gourmet toppings.

Ingredients

Scale
  • 3 large yellow onions, thinly sliced
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon sugar (optional, for faster browning)
  • 1/4 cup water or low-sodium vegetable broth (for deglazing)

Instructions

  1. Slice the onions thinly and uniformly. Uniform slices help them cook evenly.
  2. Place a large, heavy-bottomed skillet over medium-low heat. Add the butter and olive oil.
  3. Add the sliced onions to the skillet and toss them to coat them evenly with the fat. Sprinkle with salt.
  4. Cook the onions slowly, stirring every 5 to 7 minutes. For the first 15 minutes, the onions will soften and release moisture. Do not rush this stage.
  5. After about 20 minutes, the onions will start to turn translucent. If the bottom of the pan develops brown bits (fond), add 1 tablespoon of water or broth and scrape the bottom of the pan to lift those flavors up. This is key for deep flavor onions.
  6. Continue cooking, stirring more frequently as they begin to brown (around the 30-minute mark). If you are using sugar, add it now.
  7. Reduce the heat to low if the onions are browning too quickly. The goal is a deep, rich, mahogany brown color, which usually takes 40 to 50 minutes total for the slow cooked onions method.
  8. Once the onions are deeply colored and sweet, remove them from the heat. These are your savory sweet onion topping ready for use.

Notes

  • For a quick onion hack, you can add a teaspoon of sugar after 20 minutes to speed up the caramelization process slightly, though the flavor will be less complex than true slow cooked onions.
  • These caramelized onions are excellent as a base for French onion pasta sauce or as a topping for burgers and sandwiches.
  • To make a caramelized onion dip recipe base, use these onions mixed with cream cheese or sour cream.
  • This recipe is naturally vegan if you substitute the butter with vegan butter or use only olive oil.
