  • 1 cup vegetable oil
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups grated carrots (about 3 medium carrots)
  • 1/2 cup chopped walnuts or pecans (optional)
  • For the Filling:
  • 8 ounces cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
  3. In a separate bowl, whisk the granulated sugar, brown sugar, and vegetable oil until combined.
  4. Beat in the eggs one at a time, then mix in the vanilla extract.
  5. Gradually add the wet ingredients to the dry ingredients, mixing just until combined. Do not overmix.
  6. Fold in the grated carrots and nuts, if using.
  7. Prepare the filling: Beat the softened cream cheese, sugar, egg yolk, and vanilla extract until smooth and creamy.
  8. Fill each muffin liner about two-thirds full with the carrot batter.
  9. Spoon about 1 teaspoon of the cream cheese filling into the center of the batter in each cup.
  10. Bake for 20 to 25 minutes, or until a toothpick inserted into the muffin part (avoiding the filling) comes out clean.
  11. Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

  • Shred your carrots fresh for the best moisture content.
  • You can use Greek yogurt instead of oil for a slightly lighter muffin, but texture will change.
