This recipe shows you how to make a low-carb cauliflower fried rice. It replaces traditional rice with pulsed cauliflower and combines it with eggs, vegetables, and soy sauce for a savory dish.

  • 1 head cauliflower, about 2 pounds
  • 2 tablespoons sesame oil, divided
  • 1 cup frozen peas and carrots blend
  • 1/2 cup chopped yellow onion
  • 2 cloves garlic, minced
  • 1/2 cup chopped green onions, plus more for garnish
  • 2 large eggs, beaten
  • 3 tablespoons low-sodium soy sauce or tamari
  • 1 teaspoon fresh ginger, grated (optional)
  • Salt and black pepper to taste

Instructions

  1. Wash and pat dry the cauliflower. Remove the leaves and core. Cut the cauliflower into florets.
  2. Working in batches, pulse the cauliflower florets in a food processor until they resemble grains of rice. Be careful not to over-process, or it will become mushy.
  3. Heat 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat. Add the peas and carrots blend and chopped yellow onion. Cook for 3-5 minutes, until the vegetables are tender-crisp.
  4. Add the minced garlic and grated ginger (if using) to the skillet. Cook for 1 minute more, until fragrant.
  5. Push the vegetables to one side of the skillet. Pour the beaten eggs into the empty space. Scramble the eggs until just set, then break them into smaller pieces and mix them with the vegetables.
  6. Add the riced cauliflower to the skillet. Stir well to combine with the vegetables and eggs. Cook for 5-7 minutes, stirring occasionally, until the cauliflower is tender and slightly browned.
  7. Pour the remaining 1 tablespoon of sesame oil and the soy sauce over the cauliflower mixture. Stir thoroughly to coat everything evenly.
  8. Season with salt and black pepper to taste.
  9. Stir in the 1/2 cup of chopped green onions. Cook for 1 minute more.
  10. Serve hot, garnished with additional chopped green onions if desired.

Notes

  • For extra protein, add cooked chicken, shrimp, or tofu.
  • Adjust the amount of soy sauce to your preference.
  • You can prepare the cauliflower rice ahead of time and store it in the refrigerator for up to 3 days.
