  • 1 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1/4 cup water
  • 1/2 cup pecan halves
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground cloves
  • Pinch of salt

Instructions

  1. Line a baking sheet with parchment paper or a silicone mat. Lightly grease it.
  2. Combine sugar, corn syrup, and water in a heavy-bottomed saucepan. Stir over medium heat until the sugar dissolves.
  3. Stop stirring once the mixture boils. Cook until it reaches 300°F (hard crack stage) on a candy thermometer.
  4. Remove the pan from the heat. Quickly stir in the pecans, cinnamon, cardamom, ginger, cloves, and salt.
  5. Immediately sprinkle the baking soda over the mixture and stir vigorously until it is fully incorporated and the mixture foams up.
  6. Pour the hot mixture onto the prepared baking sheet. Spread it thinly using a heatproof spatula. Do not scrape the bottom of the pan.
  7. Let the brittle cool completely, about 30 minutes.
  8. Break the cooled brittle into irregular pieces. Store in an airtight container.

Notes

  • Work quickly once the mixture reaches temperature. The baking soda reaction happens fast.
  • Use high-quality spices for the best chai flavor.
  • Pecans can be lightly toasted beforehand for deeper flavor, but this is optional.
