Champagne Risotto with Pear and Thyme

Create an elegant and celebratory Champagne Risotto, featuring sweet pear and aromatic thyme. This creamy dish is perfect for making your New Year’s Eve dinner special.

  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 1/2 cups Arborio rice
  • 1/2 cup dry Champagne (plus more for topping)
  • 4 cups warm chicken or vegetable broth
  • 1 firm ripe pear, peeled, cored, and diced
  • 1 teaspoon fresh thyme leaves
  • 1/4 cup grated Parmesan cheese
  • Salt and freshly ground black pepper to taste

Instructions

  1. Heat the olive oil and butter in a large, heavy-bottomed pot or Dutch oven over medium heat.
  2. Add the chopped onion and cook until softened, about 5 minutes.
  3. Add the minced garlic and cook for 1 minute until fragrant.
  4. Add the Arborio rice and toast, stirring constantly, for about 2 minutes until the edges of the grains look translucent.
  5. Pour in the Champagne. Stir until the liquid is completely absorbed, about 2 minutes.
  6. Add one ladleful (about 1/2 cup) of warm broth to the rice. Stir continuously until the liquid is almost fully absorbed.
  7. Continue adding the broth, one ladleful at a time, stirring frequently and waiting until each addition is absorbed before adding the next. This process takes about 18-20 minutes.
  8. When the risotto is nearly creamy and the rice is al dente, stir in the diced pear and thyme leaves. Cook for 2 more minutes.
  9. Remove the pot from the heat. Stir in the Parmesan cheese. Season with salt and pepper to your liking.
  10. Serve immediately, topped with an extra drizzle of Champagne if desired.

Notes

  • Ensure your broth stays warm throughout the cooking process; cold broth stops the cooking of the rice.
  • Stirring is key to releasing the starch and achieving that signature creamy texture.
  • You can substitute Prosecco for Champagne if you wish.
