  • 1 cup masa harina (fine corn flour)
  • 4 cups water
  • 1/2 cup packed piloncillo (or brown sugar), grated
  • 1/4 cup unsweetened cocoa powder
  • 1 cinnamon stick
  • 1/4 teaspoon ground anise seed
  • Pinch of salt

Instructions

  1. In a medium saucepan, combine the water and cinnamon stick. Bring to a simmer over medium heat.
  2. In a separate bowl, whisk together the masa harina, cocoa powder, anise seed, and salt.
  3. Slowly whisk the dry ingredients into the simmering water until fully incorporated and smooth.
  4. Add the piloncillo (or brown sugar) to the mixture.
  5. Continue to simmer over low heat, stirring frequently with a whisk to prevent lumps and sticking. Do this for 20 to 30 minutes, or until the Champurrado has thickened to your desired consistency. The longer you cook, the thicker it gets.
  6. Remove the cinnamon stick before serving.
  7. Serve hot in mugs.

Notes

  • You can substitute regular granulated sugar for piloncillo, but piloncillo adds authentic depth.
  • For a richer flavor, use Mexican chocolate tablets instead of just cocoa powder.
  • If the mixture becomes too thick while simmering, add a little more hot water.
