1 pound ground beef
1 medium onion, chopped
2 cloves garlic, minced
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
4 cups beef broth
8 ounces dry elbow macaroni
1 (14.5 ounce) can diced tomatoes, undrained
1 cup milk
1 cup shredded cheddar cheese
1/2 cup shredded Monterey Jack cheese
1/4 cup ketchup
1 tablespoon yellow mustard

Instructions
Brown the ground beef and chopped onion in a large skillet over medium heat. Drain excess grease.
Stir in the minced garlic, Italian seasoning, salt, and pepper. Cook for one minute until fragrant.
Pour in the beef broth and add the diced tomatoes with their juice. Bring the mixture to a simmer.
Add the dry macaroni to the skillet. Stir well.
Reduce heat to medium-low, cover the skillet, and cook for 10 to 12 minutes, stirring occasionally to prevent sticking, until the pasta is tender.
Stir in the milk, ketchup, and mustard.
Remove the skillet from the heat. Stir in the cheddar and Monterey Jack cheeses until the sauce is smooth and creamy.
Serve immediately, topping individual portions with chopped pickles, if desired.
Notes
You can substitute ground turkey for ground beef for a lighter version.
