Instructions
Preheat your oven to 375 degrees F. Line a 12-cup muffin tin with paper liners.
In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
In a large bowl, cream together the softened butter and 3/4 cup sugar until light and fluffy. Beat in the eggs one at a time, then mix in the vanilla extract.
Alternate adding the dry ingredients and the buttermilk to the wet ingredients, mixing until just combined. Do not overmix.
Prepare the cream cheese filling: Beat the softened cream cheese, 1/4 cup sugar, egg yolk, and 1/2 teaspoon vanilla extract until smooth.
Prepare the cinnamon swirl mixture: In a small bowl, mix the 1 tablespoon brown sugar and 1/2 teaspoon cinnamon.
Fill each muffin liner about one-third full with batter. Drop a spoonful of the cream cheese filling into the center of the batter.
Top the cream cheese filling with a small amount of the remaining batter.
Gently swirl the top of the batter with a toothpick, incorporating some of the cream cheese filling. Sprinkle the tops with the cinnamon sugar mixture.
Bake for 18 to 22 minutes, or until a toothpick inserted into the muffin part comes out clean. Let cool in the tin for 5 minutes before transferring to a wire rack.
Notes
Use room temperature ingredients for the cream cheese filling to prevent lumps.
Do not over-swirl; too much mixing will blend the layers instead of creating a distinct ribbon.
For a stronger cinnamon flavor, add 1 teaspoon of ground cinnamon to the main muffin batter.
