Ingredients
Scale
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
1 tablespoon olive oil
1 cup chopped broccoli florets
1 can (10.5 ounces) condensed cream of chicken soup
1/2 cup milk
1/2 cup shredded cheddar cheese
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
Cooked rice (for serving)
Instructions
Preheat your oven to 375°F (190°C).
In a large skillet, heat the olive oil over medium heat. Add the chicken pieces and cook until browned on all sides.
Add the broccoli florets to the skillet and cook for 3-5 minutes, until slightly tender.
Stir in the condensed cream of chicken soup, milk, shredded cheddar cheese, black pepper, and garlic powder.
Cook, stirring occasionally, until the cheese is melted and the mixture is heated through.
Serve the cheesy broccoli chicken mixture over cooked rice.
Notes
For an extra creamy texture, you can add a splash of heavy cream along with the milk.
Feel free to add other vegetables like carrots or peas for extra nutrition and color.
If you prefer a more golden topping, you can sprinkle a little extra cheese over the casserole before baking (if baking as a casserole).
