  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup orzo pasta
  • 3 cups vegetable or chicken broth
  • 1 cup broccoli florets, small
  • 1/2 cup heavy cream
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and black pepper to taste

Instructions

  1. Heat the olive oil in a medium saucepan over medium heat. Add the chopped onion and cook until soft, about 4 minutes.
  2. Add the minced garlic and cook for 1 minute until fragrant.
  3. Stir in the orzo pasta and toast it for 1 minute.
  4. Pour in the broth. Bring the mixture to a simmer.
  5. Add the broccoli florets. Cook, stirring occasionally, until the orzo is tender and most of the liquid is absorbed, about 12-15 minutes.
  6. Reduce the heat to low. Stir in the heavy cream.
  7. Remove the saucepan from the heat. Stir in the cheddar cheese and Parmesan cheese until the mixture is smooth and creamy.
  8. Season with salt and pepper to your liking. Serve immediately.
