  • 1 1/2 cups uncooked white rice
  • 3 cups water
  • 1 (10.5 ounce) can cream of chicken soup
  • 1 cup milk
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 2 cups chopped fresh or frozen broccoli florets, cooked until tender-crisp
  • 2 cups shredded sharp cheddar cheese, divided
  • 1/2 cup breadcrumbs (optional topping)
  • 2 tablespoons melted butter (optional topping)

Instructions

  1. Preheat your oven to 375 degrees F (190 degrees C). Lightly grease a 9×13 inch baking dish.
  2. Cook the rice according to package directions using the 3 cups of water. Set aside.
  3. In a large bowl, whisk together the cream of chicken soup, milk, onion powder, pepper, and salt until smooth.
  4. Stir in the cooked rice, cooked broccoli florets, and 1 1/2 cups of the shredded cheddar cheese into the soup mixture. Mix gently until everything is combined.
  5. Spread the rice mixture evenly into your prepared baking dish.
  6. Sprinkle the remaining 1/2 cup of cheddar cheese over the top of the casserole.
  7. If using, combine the breadcrumbs and melted butter. Sprinkle this mixture over the cheese layer.
  8. Bake for 25 to 30 minutes, or until the casserole is bubbly and the topping is golden brown.
