Ingredients
Scale
1 cup uncooked white rice
2 cups chicken broth
2 cups cooked, shredded chicken
1 (10.75 ounce) can condensed cream of chicken soup
1 cup sour cream
1/2 cup milk
1 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
2 cups fresh or frozen broccoli florets, thawed
2 cups shredded cheddar cheese, divided
Instructions
Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
Cook the rice in the chicken broth according to package directions.
In a large bowl, combine the cooked rice, shredded chicken, cream of chicken soup, sour cream, milk, onion powder, garlic powder, and pepper. Mix well.
Gently fold in the broccoli florets and 1 cup of the shredded cheddar cheese.
Spread the mixture evenly into your prepared baking dish.
Top with the remaining 1 cup of shredded cheddar cheese.
Bake for 25 to 30 minutes, or until the casserole is bubbly and the cheese is melted and lightly golden.
Let it stand for 5 minutes before serving. Enjoy your simple, delicious meal.
Notes
You can use leftover rotisserie chicken for extra speed.
If using frozen broccoli, do not thaw it completely; add it straight from the freezer for best texture.
For a richer flavor, substitute half the milk with heavy cream.
