  • 1/4 teaspoon black pepper

  • 4 pieces fried chicken (pre-cooked or freshly made)
  • Oil for waffle iron

Instructions

  1. Prepare the grits according to package directions using water or milk and salt. Stir frequently.
  2. Once cooked, remove grits from heat. Stir in butter and cheddar cheese until fully melted and smooth.
  3. Let the grits cool slightly, about 10 minutes.
  4. In a small bowl, whisk the egg yolks. Stir the yolks into the cooled grits mixture.
  5. In a separate bowl, whisk together the flour, baking powder, black pepper, and cayenne pepper, if using.
  6. In a clean bowl, beat the egg whites until stiff peaks form.
  7. Gently fold the dry ingredients into the grits mixture. Then, gently fold in the beaten egg whites until just combined. Do not overmix.
  8. Preheat your waffle iron and lightly brush with oil.
  9. Pour batter onto the hot iron, using enough to cover the surface without overflowing. Close the lid.
  10. Cook according to your waffle iron’s instructions until golden brown and crisp.
  11. Repeat with the remaining batter.
  12. Serve the hot Cheesy Grits Waffles immediately topped with your favorite fried chicken pieces.
