2 lbs yellow squash, sliced
1/2 cup chopped onion
1/4 cup butter
1/4 cup all-purpose flour
2 cups milk
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup breadcrumbs
Instructions
Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish.
In a large pot, bring lightly salted water to a boil. Add the sliced squash and cook for 5-7 minutes, or until tender-crisp. Drain well.
In a medium saucepan, melt the butter over medium heat. Add the chopped onion and cook until softened, about 3-5 minutes.
Stir in the flour and cook for 1 minute, stirring constantly, to form a roux.
Gradually whisk in the milk until the mixture is smooth and thickened.
Remove from heat and stir in the cheddar cheese, Parmesan cheese, salt, and pepper until the cheeses are melted and the sauce is smooth.
Combine the cooked squash with the cheese sauce in a large bowl, mixing gently to coat.
Pour the squash mixture into the prepared baking dish.
Sprinkle the breadcrumbs evenly over the top of the casserole.
Bake for 20-25 minutes, or until bubbly and golden brown on top.
Let stand for 5 minutes before serving.
Notes
For extra flavor, sauté a clove of minced garlic with the onion.
You can substitute other cheeses like Gruyère or Monterey Jack for a different flavor profile.
To make this dish ahead, assemble the casserole and refrigerate. Add an extra 10-15 minutes to the baking time if baking from cold.
