Make this Cheesy Taco Pasta for a quick, family-pleasing dinner. You combine familiar taco flavors with creamy pasta for a fun fusion dish that kids love.

Ingredients

  • 1 pound pasta (like elbow macaroni or shells)
  • 1 pound ground beef or turkey
  • 1 onion, chopped
  • 1 packet taco seasoning
  • 1 (10 ounce) can diced tomatoes and green chilies, undrained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 cup beef or chicken broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. In a large skillet, brown the ground meat and chopped onion over medium heat. Drain off any excess fat.
  3. Stir in the taco seasoning, diced tomatoes and green chilies, black beans, and broth. Bring the mixture to a simmer.
  4. Reduce the heat to low. Stir in the heavy cream until fully combined.
  5. Add the cooked pasta to the skillet. Stir well to coat.
  6. Remove the skillet from the heat. Stir in the cheddar cheese and Monterey Jack cheese until the sauce is smooth and creamy.
  7. Season with salt and pepper as needed. Serve immediately.

Notes

  • For extra flavor, add 1/2 teaspoon of cumin with the taco seasoning.
  • If you prefer a lighter sauce, substitute half-and-half for the heavy cream.
  • Feel free to add corn or chopped bell peppers when browning the meat.
