  • 6 cups sliced zucchini (about 3 medium)
  • 1/2 cup chopped onion
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 2 cups shredded cheddar cheese, divided
  • 1/2 cup breadcrumbs

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. In a large skillet, melt butter over medium heat. Add onion and cook until softened, about 5 minutes.
  3. Stir in flour and cook for 1 minute. Gradually whisk in milk until smooth. Cook, stirring constantly, until the sauce thickens.
  4. Remove from heat. Stir in salt, pepper, garlic powder, and 1 1/2 cups of the shredded cheddar cheese until melted and smooth.
  5. Add the sliced zucchini to the cheese sauce and stir to coat.
  6. Pour the zucchini mixture into the prepared baking dish.
  7. Sprinkle the remaining 1/2 cup cheddar cheese and breadcrumbs over the top.
  8. Bake for 25-30 minutes, or until bubbly and the top is golden brown.
  9. Let stand for 5 minutes before serving.

  • For extra flavor, add a pinch of paprika to the cheese sauce.
  • You can use other types of cheese like Monterey Jack or Gruyere.
  • To make it gluten-free, use gluten-free flour and gluten-free breadcrumbs.
