- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 6 tablespoons cold unsalted butter, cut into small pieces
- 1/2 cup heavy cream, plus more for brushing
- 1 large egg
- 1 teaspoon vanilla extract
- 3/4 cup dried cherries
- 1/2 cup good quality chocolate chunks
- Preheat your oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
- In a small bowl, whisk together the heavy cream, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients. Mix gently until just combined. Do not overmix.
- Fold in the dried cherries and chocolate chunks gently.
- Turn the dough out onto a lightly floured surface. Pat or lightly roll the dough into a 3/4-inch thick circle or rectangle.
- Cut the dough into 8 equal wedges or use a round cutter for scones. Place them on the prepared baking sheet.
- Brush the tops lightly with a little extra heavy cream.
- Bake for 15 to 18 minutes, or until the tops are golden brown.
- Let the scones cool slightly on a wire rack before serving warm.
Notes
- Keep your butter very cold for the flakiest scones.
- Handle the dough as little as possible; overworking develops gluten, making tough scones.
- You can use fresh or frozen cherries if you drain them very well first. Adjust baking time slightly if using frozen.
- For extra flavor, add 1/2 teaspoon of almond extract with the vanilla.
