1 cup (2 sticks) unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
2 (21 ounce) cans cherry pie filling
1/4 cup granulated sugar (for topping)
1/4 teaspoon ground cinnamon (for topping)
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
In a large bowl, cream together the softened butter and 1 cup of sugar until light and fluffy.
Beat in the eggs one at a time, then stir in the vanilla extract.
In a separate bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Press about two-thirds of the dough evenly into the bottom of the prepared baking pan to form the crust.
Spread the cherry pie filling evenly over the crust.
Crumble the remaining one-third of the dough over the cherry pie filling.
In a small bowl, mix together the 1/4 cup sugar and cinnamon. Sprinkle this mixture evenly over the crumbled topping.
Bake for 35-45 minutes, or until the topping is golden brown and the filling is bubbly.
Let the bars cool completely in the pan before cutting into squares.
Notes
For an extra touch, you can add a dollop of whipped cream or a scoop of vanilla ice cream when serving.
These bars can be stored in an airtight container at room temperature for up to 3 days.
