1 (4-5 lb) pork loin roast, bone-in or boneless
1 cup cooked, chopped chestnuts
1 cup bread crumbs
1/2 cup finely chopped celery
1/4 cup finely chopped onion
2 tablespoons fresh sage, chopped
1/4 cup chicken broth
1 tablespoon olive oil
Salt and freshly ground black pepper to taste
Instructions
Preheat your oven to 350°F (175°C).
In a medium bowl, combine the cooked chestnuts, bread crumbs, celery, onion, sage, and chicken broth. Mix well until the stuffing holds together.
If using a boneless roast, butterfly it open. Spread the chestnut stuffing evenly over the inside surface of the pork. Roll the roast back up and tie it securely with kitchen twine every 1.5 inches.
Rub the outside of the pork roast with olive oil. Season generously with salt and pepper.
Place the roast in a roasting pan. Roast for approximately 1 hour and 15 minutes to 1 hour and 45 minutes, or until an internal temperature of 145°F (63°C) is reached.
Remove the roast from the oven and tent loosely with foil. Let it rest for 15 minutes before slicing and serving.
Notes
For extra flavor, sear the roast on all sides in a hot skillet before placing it in the oven.
Use fresh sage for the best aromatic results.
Check the internal temperature with a meat thermometer inserted into the thickest part of the roast, avoiding bone.
