  • 1 pound potato gnocchi
  • 1 pound boneless, skinless chicken breasts, cooked and shredded
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1.5 cups heavy cream
  • 1/2 cup chicken broth
  • 1 cup grated Parmesan cheese, plus extra for topping
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. Cook gnocchi according to package directions until they float. Drain well and set aside.
  3. In a large saucepan over medium heat, melt the butter. Add the minced garlic and cook for one minute until fragrant.
  4. Pour in the heavy cream and chicken broth. Bring the mixture to a gentle simmer, stirring occasionally. Do not boil rapidly.
  5. Reduce the heat to low. Stir in the Parmesan cheese, salt, pepper, and nutmeg. Continue stirring until the cheese melts and the sauce thickens slightly.
  6. Remove the sauce from the heat. Gently fold in the cooked, shredded chicken and the cooked gnocchi until everything is evenly coated.
  7. Pour the gnocchi mixture into the prepared baking dish.
  8. Sprinkle the top evenly with the mozzarella cheese and a little extra Parmesan cheese.
  9. Bake for 15 to 20 minutes, or until the cheese is melted, bubbly, and lightly golden brown.
  10. Let the bake rest for 5 minutes before serving.

Notes

  • You can use store-bought rotisserie chicken to save time on cooking the chicken.
  • For extra flavor, add 2 cups of steamed broccoli florets to the mixture before baking.
  • If the sauce seems too thick after adding the gnocchi, add a splash more chicken broth until you reach your desired consistency.
