  • 1 lb boneless, skinless chicken breast, thinly sliced
  • 8 oz dried egg noodles
  • 2 tablespoons soy sauce, divided
  • 1 teaspoon cornstarch
  • 2 tablespoons vegetable oil, divided
  • 1 cup shredded cabbage
  • 1 cup sliced carrots
  • 1 cup sliced celery
  • 4 green onions, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/4 cup chicken broth
  • 2 tablespoons oyster sauce
  • 1 tablespoon dark soy sauce
  • 1 teaspoon sesame oil

Instructions

  1. Toss the sliced chicken with 1 tablespoon of regular soy sauce and cornstarch. Set aside for 10 minutes.
  2. Cook the egg noodles according to package directions until tender but still firm. Drain the noodles and toss them with 1 teaspoon of vegetable oil to prevent sticking.
  3. In a small bowl, whisk together the chicken broth, oyster sauce, dark soy sauce, and sesame oil to create the sauce.
  4. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir fry until cooked through and lightly browned, about 4-5 minutes. Remove the chicken and set it aside.
  5. Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the carrots, cabbage, and celery. Stir fry for 3 minutes until the vegetables are crisp-tender.
  6. Add the minced garlic and ginger to the vegetables and cook for 30 seconds until fragrant.
  7. Return the cooked chicken to the skillet. Add the cooked noodles and the prepared sauce mixture.
  8. Toss everything together well for 1-2 minutes until the noodles and vegetables are coated and the sauce has thickened slightly.
  9. Stir in the chopped green onions just before serving.

Notes

  • For extra flavor, use dark soy sauce sparingly when marinating the chicken.
  • You can substitute broccoli florets or sliced bell peppers for any of the listed vegetables.
  • If you prefer softer noodles, cook them 1 minute longer than directed, but drain them quickly.
