  • 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 tablespoon soy sauce (for marinating chicken)
  • 1 teaspoon cornstarch (for marinating chicken)
  • 8 ounces dried egg noodles
  • 2 tablespoons vegetable oil, divided
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup shredded carrots
  • 1 cup sliced celery or green bell pepper
  • 4 green onions, chopped (separate white and green parts)
  • 1/4 cup low sodium soy sauce (for sauce)
  • 2 tablespoons oyster sauce (or vegetarian stir-fry sauce)
  • 1 tablespoon dark soy sauce (for color)
  • 1 teaspoon sesame oil
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon white pepper
  • 1/4 cup chicken broth

Instructions

  1. Combine the chicken pieces with 1 tablespoon soy sauce and cornstarch. Set aside to marinate for 10 minutes.
  2. Cook the egg noodles according to package directions until tender but still firm. Drain well and set aside.
  3. In a small bowl, whisk together the sauce ingredients: low sodium soy sauce, oyster sauce, dark soy sauce, sesame oil, ginger, white pepper, and chicken broth. Set the savory asian noodles recipe sauce aside.
  4. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir fry until cooked through and lightly browned, about 4-5 minutes. Remove the chicken from the skillet and set aside.

  7. Add the cooked noodles to the skillet. Toss continuously for 1-2 minutes until the noodles are heated through and coated evenly with the sauce.
