1 pound pasta (penne or rotini)
1 tablespoon olive oil
1 pound cooked chicken breast, shredded or cubed
1 cup chicken broth
1 (10.5 ounce) can cream of chicken soup
1 (8 ounce) package cream cheese, softened
1/2 cup sour cream
1 packet (1 ounce) dry ranch seasoning mix
1/2 cup milk
2 cups shredded cheddar cheese, divided
1/2 cup shredded mozzarella cheese
1/4 cup panko breadcrumbs (optional topping)
Instructions
Preheat your oven to 375 degrees F. Lightly grease a 9×13 inch baking dish.
Cook the pasta according to package directions until al dente. Drain well.
In a large bowl, whisk together the chicken broth, cream of chicken soup, softened cream cheese, sour cream, ranch seasoning mix, and milk until smooth.
Fold in the cooked chicken and 1 1/2 cups of the cheddar cheese into the sauce mixture.
Add the drained pasta to the sauce mixture and stir gently until everything is evenly coated.
Pour the pasta mixture into your prepared baking dish.
Sprinkle the remaining 1/2 cup of cheddar cheese and the mozzarella cheese over the top. If using, sprinkle with panko breadcrumbs.
Bake for 20 to 25 minutes, or until the cheese is bubbly and lightly browned.
Let the casserole rest for 5 minutes before serving.
Notes
You can use rotisserie chicken to save time when preparing the chicken.
For an extra layer of flavor, add 1/2 cup of cooked, crumbled bacon to the mix.
If the sauce seems too thick before baking, add a splash more milk until you reach your desired consistency.
