Create a fun twist on taco night with these hearty Chicken Taco Stuffed Potatoes. Bake potatoes until soft, then load them up with seasoned shredded chicken and your favorite taco toppings for a customizable and satisfying meal.

  • 4 large Russet potatoes
  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts
  • 1 packet taco seasoning
  • 1 cup water
  • 1 cup shredded cheddar cheese (or your preferred cheese)
  • 1/2 cup sour cream (or Greek yogurt)
  • 1/4 cup salsa
  • 2 tablespoons chopped fresh cilantro
  • Optional toppings: black beans, diced tomatoes, sliced jalapeños

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prick each potato several times with a fork. Rub the skins lightly with olive oil and a pinch of salt.
  3. Bake the potatoes for 45 to 60 minutes, or until they are tender when squeezed.
  4. While potatoes bake, cook the chicken. Place chicken breasts, taco seasoning, and water in a saucepan.
  5. Bring to a simmer over medium heat. Cover and cook for 15-20 minutes, or until the chicken is cooked through.
  6. Remove chicken and shred it using two forks. Return the shredded chicken to the pan with the liquid and stir to coat completely.
  7. Once potatoes are done, carefully slice each potato open lengthwise, fluffing the inside flesh with a fork.
  8. Spoon the seasoned chicken mixture generously into each potato.
  9. Top each stuffed potato with shredded cheese, a dollop of sour cream, salsa, and fresh cilantro.
  10. Add any other desired toppings and serve immediately.

Notes

  • For quicker cooking, you can microwave the potatoes for 5-7 minutes before baking them to reduce oven time.
  • Use rotisserie chicken if you want to skip the cooking step for the chicken.
  • Feel free to substitute the chicken with ground beef or turkey using your favorite taco seasoning mix.
