A quick and easy chickpea salad that mimics tuna salad, perfect for a no-cook vegetarian lunch.

  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 1/4 cup finely chopped celery
  • 2 tablespoons finely chopped red onion
  • 2 tablespoons vegan mayonnaise
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon lemon juice
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, mash the chickpeas with a fork until mostly broken down but still with some texture.
  2. Add the chopped celery and red onion to the bowl.
  3. Stir in the vegan mayonnaise, Dijon mustard, and lemon juice.
  4. Mix well until all ingredients are combined.
  5. Season with salt and pepper to your preference.
  6. Serve immediately or chill for later.
