  • 4 tablespoons chili garlic sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 2 tablespoons neutral oil (like vegetable or canola)
  • 1/4 cup chopped green onions, for garnish
  • 1 teaspoon toasted sesame seeds, for garnish

Instructions

  1. Cook the noodles according to package directions until al dente. Reserve about 1/2 cup of the starchy cooking water before draining.
  2. While the noodles cook, whisk together the chili garlic sauce, soy sauce, rice vinegar, sesame oil, and sugar in a small bowl. Set the sauce aside.
  3. Heat the neutral oil in a large skillet or wok over medium heat. Add the minced garlic and grated ginger. Cook for about 30 seconds until fragrant, being careful not to burn the garlic.
  4. Pour the reserved sauce mixture into the skillet. Cook for 1 minute, stirring constantly, until it bubbles slightly.
  5. Add the drained noodles to the skillet. Toss everything well to coat the noodles evenly with the sauce.
  6. If the sauce seems too thick, add the reserved noodle water, one tablespoon at a time, until you reach your desired consistency.
  7. Remove from heat. Toss once more. Serve immediately, topped with fresh green onions and toasted sesame seeds.
