Ingredients
Scale
1 pound fresh green beans, trimmed
2 tablespoons vegetable oil
4 cloves garlic, minced
1 teaspoon fresh ginger, grated
2 tablespoons soy sauce (or tamari for gluten-free)
1 tablespoon rice vinegar
1 teaspoon sugar
1/4 teaspoon ground white pepper
1 tablespoon water or vegetable broth
Instructions
Blanch the green beans in boiling water for 2 minutes until bright green. Immediately drain and plunge them into ice water to stop cooking. Drain well and pat dry.
Heat the vegetable oil in a wok or large skillet over high heat until shimmering.
Add the dry green beans to the hot wok. Stir-fry for 4 to 6 minutes, moving them constantly, until the skins begin to blister and char slightly.
Push the beans to one side of the wok. Add the minced garlic and grated ginger to the cleared space and cook for 30 seconds until fragrant.
In a small bowl, whisk together the soy sauce, rice vinegar, sugar, white pepper, and water or broth.
Pour the sauce mixture over the beans and toss everything quickly to coat. Cook for 1 minute until the sauce thickens slightly.
Remove from heat and serve immediately.
Notes
For a spicier version, add 1/2 teaspoon of chili flakes with the garlic.
If you do not have a wok, use a heavy-bottomed skillet and cook the beans in batches to maintain high heat.
These beans pair well with fried rice or stir-fried tofu for a complete meal.
