3 very ripe large bananas, mashed (about 1 1/2 cups)
1/2 cup (1 stick) unsalted butter, melted
3/4 cup packed light brown sugar
1 large egg, lightly beaten
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup semisweet chocolate chips
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
In a large bowl, mix the mashed bananas and melted butter until just combined.
Stir in the brown sugar, beaten egg, and vanilla extract until smooth.
In a separate medium bowl, whisk together the flour, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients. Mix until just combined; do not overmix.
Fold in the chocolate chips gently.
Pour the batter into the prepared loaf pan.
Bake for 50 to 65 minutes, or until a wooden skewer inserted into the center comes out clean or with moist crumbs attached.
Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
Notes
Use bananas that are heavily spotted or almost black for the best sweetness and moisture.
If the top browns too quickly during baking, lightly tent the loaf with aluminum foil for the remainder of the time.
For an extra bakery feel, reserve a few chocolate chips and sprinkle them on top before baking.
