Make soft, easy Chocolate Chip Pumpkin Bars for a perfect taste of fall. These bars combine warm pumpkin spice with gooey melted chocolate chips for a simple seasonal dessert.

Ingredients

  • Pumpkin Puree: 1 (15 ounce) can
  • All-purpose flour: 1 3/4 cups
  • Baking soda: 1 teaspoon
  • Ground cinnamon: 1 teaspoon
  • Ground nutmeg: 1/2 teaspoon
  • Ground ginger: 1/4 teaspoon
  • Salt: 1/2 teaspoon
  • Unsalted butter, softened: 1/2 cup (1 stick)
  • Granulated sugar: 1 cup
  • Eggs: 2 large
  • Vanilla extract: 1 teaspoon
  • Chocolate chips: 1 cup

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, ginger, and salt. Set this dry mix aside.
  3. In a large bowl, cream together the softened butter and granulated sugar until the mixture is light and fluffy.
  4. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  6. Gently fold in the pumpkin puree until it is evenly incorporated into the batter.
  7. Stir in the chocolate chips.
  8. Spread the batter evenly into your prepared baking pan.
  9. Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean or with moist crumbs attached.

Notes

  • Make sure your butter is truly softened for the creaming step. This creates a better texture.
  • You can use pumpkin pie spice blend instead of mixing the individual spices. Use 2 teaspoons of pumpkin pie spice total.
