  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup melted butter
  • 16 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 2 large eggs
  • 8 ounces semi-sweet chocolate, melted and cooled
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Wrap the outside of a 9-inch springform pan in heavy-duty aluminum foil.
  2. Combine chocolate cookie crumbs and melted butter. Press the mixture firmly into the bottom of the prepared pan. Bake for 10 minutes. Let cool.
  3. In a large bowl, beat the softened cream cheese and sugars until smooth. Add eggs one at a time, beating well after each addition.
  4. Stir in the cooled melted chocolate and vanilla extract. Mix until just combined.
  5. In a small bowl, whisk together the ground ginger, cinnamon, cloves, and salt. Add this spice mixture to the cheesecake batter and mix until the spices are evenly distributed.
  6. Pour the batter over the cooled crust. Place the springform pan into a larger roasting pan. Carefully pour hot water into the roasting pan until it reaches halfway up the sides of the springform pan (this creates a water bath).
  7. Bake for 50 to 60 minutes, or until the edges are set and the center has a slight jiggle.
  8. Turn off the oven. Prop the oven door open slightly and let the cheesecake cool in the oven for 1 hour.
  9. Remove from the water bath and cool completely on a wire rack. Chill in the refrigerator for at least 4 hours, or preferably overnight, before serving.
