Bake this warm and comforting Chocolate Gingerbread Loaf. It is perfectly spiced with ginger and molasses, then finished with a rich chocolate drizzle. It’s a wonderful treat for any time of year.

Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/2 cup unsulfured molasses
  • 1/2 cup sour cream or plain yogurt
  • 1/4 cup boiling water
  • 4 ounces semi-sweet chocolate, for drizzling

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a standard 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, cloves, and nutmeg. Set aside.
  3. In a large bowl, cream the softened butter and granulated sugar together until light and fluffy. Beat in the egg.
  4. Mix in the molasses and sour cream until just combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just blended.
  6. Carefully stir in the boiling water until the batter is smooth. The batter will be thin.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the loaf cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
  10. Once cool, melt the semi-sweet chocolate in a small bowl in the microwave in 30-second intervals, stirring between each until smooth.
  11. Drizzle the melted chocolate over the top of the cooled loaf. Let the chocolate set before slicing and serving.

Notes

  • For the best flavor, use unsulfured molasses.
  • If you prefer a stronger chocolate flavor, use dark chocolate for the drizzle.
  • You can add 1/2 cup of dark chocolate chips to the batter before baking for extra richness.
