  • 1 3/4 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Zest of 1 large orange
  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup chopped toasted almonds (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate bowl, lightly beat the eggs. Stir in the vanilla extract and orange zest.
  4. Gradually add the wet ingredients to the dry ingredients. Mix until just combined. Do not overmix.
  5. Fold in the chocolate chips and almonds, if using. The dough will be stiff.
  6. On the prepared baking sheet, shape the dough into a log about 10 inches long and 2 inches wide.
  7. Bake for 25 to 30 minutes, until the log is lightly golden and firm to the touch.
  8. Remove from the oven and let cool on the pan for 10 minutes.
  9. Slice the warm log diagonally into 1/2-inch thick slices.
  10. Lay the slices cut-side down on the baking sheet.
  11. Return the biscotti to the oven and bake for another 10 to 15 minutes, flipping halfway through, until they are dry and crisp.
  12. Cool completely on a wire rack.

Notes

  • Toasting the almonds brings out their best flavor.
  • For an extra bright orange flavor, use an extra teaspoon of zest.
  • Store cooled biscotti in an airtight container at room temperature.
