Ingredients
Scale
1/2 cup rolled oats
1 tablespoon chia seeds
2 tablespoons unsweetened cocoa powder
1 scoop vanilla or chocolate protein powder (optional, for high protein oats)
1 tablespoon maple syrup or honey
1/2 cup milk (dairy or dairy free option)
1/4 cup Greek yogurt (or dairy-free yogurt)
1/4 teaspoon vanilla extract
1 tablespoon mini chocolate chips (optional topping)
Instructions
In a jar or container with a lid, combine the rolled oats, chia seeds, cocoa powder, and protein powder (if using). Mix the dry ingredients well.
Add the milk, Greek yogurt, maple syrup, and vanilla extract to the dry mixture.
Stir everything together thoroughly until no dry pockets of cocoa powder remain. Make sure the chia seeds are fully submerged.
Cover the container and place it in the refrigerator for at least 4 hours, but preferably overnight.
In the morning, stir the mixture. If it is too thick, add a splash more milk until you reach your desired creamy overnight oats consistency.
Top with mini chocolate chips or other desired toppings before serving. Enjoy this quick grab and go meal.
Notes
For a peanut butter chocolate oats flavor, add 1 tablespoon of peanut butter when mixing the wet ingredients.
If you prefer a less sweet taste, start with 2 teaspoons of maple syrup and adjust later.
This recipe is great for meal prep oatmeal; you can prepare 3-4 jars at once.
