1 head mixed greens
2 ripe pears, sliced thin
1 cup pomegranate arils
1/2 cup toasted walnuts or pecans
4 ounces crumbled goat cheese or blue cheese (optional)
For the Dressing:
1/4 cup olive oil
2 tablespoons apple cider vinegar
1 tablespoon maple syrup
1 teaspoon Dijon mustard
Salt and black pepper to taste
Instructions
Prepare the dressing: Whisk together olive oil, apple cider vinegar, maple syrup, and Dijon mustard in a small bowl. Season with salt and pepper.
In a large bowl, combine the mixed greens and sliced pears.
Drizzle about half of the dressing over the greens and gently toss to coat.
Arrange the salad mixture on a serving platter.
Sprinkle the pomegranate arils, toasted nuts, and cheese (if using) evenly over the top.
Serve immediately with the remaining dressing on the side.
Notes
Toasting the nuts brings out their best flavor. Do this in a dry pan over medium heat for a few minutes until fragrant.
You can make the dressing up to three days ahead and keep it refrigerated.
If goat cheese is too strong for your taste, use feta cheese instead.
