Instructions

  1. Preheat your oven to 350 degrees F. Line a 9×9 inch baking pan with parchment paper, letting the sides overhang for easy removal.
  2. In a medium bowl, whisk together the flour, baking powder, salt, 1/2 cup sugar, and 1 teaspoon cinnamon for the crust.
  3. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  4. Mix in the egg yolk and cold water until a dough just forms. Do not overmix.
  5. Press two-thirds of the dough evenly into the bottom of the prepared pan for the base. Reserve the remaining dough for the topping.

  10. In a small bowl, mix the remaining 1/2 cup sugar and 1 tablespoon cinnamon for the topping. Sprinkle this mixture over the dough crumbles.
  11. Drizzle the melted butter evenly over the cinnamon sugar topping.
  12. Bake for 30 to 35 minutes, or until the center is mostly set.
