2 cups fresh or frozen corn kernels (thawed if frozen)
1/2 cup finely chopped red onion
1/2 cup chopped fresh cilantro
1 jalapeño, seeded and minced (optional)
2 tablespoons fresh lime juice
1 tablespoon olive oil
1/4 teaspoon salt
Pinch of black pepper
Instructions
If using fresh corn, you can cook it lightly first, or use it raw for maximum crunch. If using frozen, ensure it is fully thawed.
In a medium bowl, combine the corn kernels, red onion, cilantro, and minced jalapeño.
In a small bowl, whisk together the lime juice and olive oil.
Pour the lime dressing over the corn mixture.
Add the salt and pepper.
Gently toss all the ingredients until everything is well coated.
Taste the salsa and add more lime juice or salt if needed.
