- 2 cups long-grain white rice
- 2 cups water
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 cup fresh cilantro, chopped
- 1/4 cup fresh lime juice (about 2 limes)
- 1 teaspoon lime zest
- Rinse the rice under cold water in a fine-mesh sieve until the water runs clear. Drain well.
- Combine the rinsed rice, water, olive oil, and salt in a medium saucepan.
- Bring the mixture to a boil over medium-high heat.
- Once boiling, immediately reduce the heat to the lowest setting, cover the saucepan tightly, and simmer for 15 minutes without lifting the lid.
- Remove the saucepan from the heat and let it stand, covered, for an additional 10 minutes. Do not lift the lid during this resting period.
- Fluff the rice gently with a fork.
- Stir in the chopped cilantro, fresh lime juice, and lime zest until evenly distributed.
- Taste and add more salt or lime juice if needed before serving with your burrito bowls.
Notes
- For a rice cooker, use the same water ratio and cook using the white rice setting, then stir in the cilantro and lime after the cycle finishes.
- To make this recipe brown rice friendly, increase the water to 3 cups and increase the cook time to 40 minutes, followed by the 10-minute rest.
- Use fresh lime juice; bottled juice changes the flavor profile significantly.
