Instructions

  1. Preheat your oven to 400°F (200°C). Line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, 3/4 cup granulated sugar, baking powder, baking soda, 1/2 teaspoon cinnamon, and salt for the batter.
  3. In a separate medium bowl, whisk the egg, milk, vegetable oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients. Mix gently until just combined. Do not overmix. Fold in the diced apples.
  5. Prepare the crumble topping: In a small bowl, combine the brown sugar, 1/4 cup flour, and 1/2 teaspoon cinnamon for the topping. Cut in the cold butter using your fingers or a pastry blender until the mixture resembles coarse crumbs.
