Ingredients
All-purpose flour: 4 tablespoons
Granulated sugar: 3 tablespoons, divided
Baking powder: 1/4 teaspoon
Milk: 3 tablespoons
Melted butter: 1 tablespoon
Vanilla extract: 1/4 teaspoon
Ground cinnamon: 1/2 teaspoon
Powdered sugar (for glaze): 2 tablespoons
Milk (for glaze): 1 teaspoon
Instructions
In a microwave-safe mug, whisk together the flour, 2 tablespoons of the granulated sugar, and baking powder.
Stir in the milk, melted butter, and vanilla extract until just combined. Do not overmix.
In a small separate bowl, mix the remaining 1 tablespoon of granulated sugar and the cinnamon to create the swirl filling.
Sprinkle the cinnamon-sugar mixture evenly over the top of the batter in the mug.
Use a toothpick or small knife to gently swirl the cinnamon mixture into the batter a couple of times.
Microwave on high for 60 to 90 seconds. Check for doneness; the cake should look set but still soft. Cooking time varies by microwave power.
While the cake cools slightly, whisk together the powdered sugar and 1 teaspoon of milk in a small bowl to make a simple glaze.
Drizzle the glaze over the warm mug cake and serve immediately.
Notes
For a richer flavor, substitute the milk with buttermilk.
If you prefer a runnier glaze, add a tiny bit more milk to the glaze mixture.
Watch your microwave carefully; overcooking makes the cake tough.
